The journey so far;
May 2019 - Beginning its journey as a Brettanomyces Saison, the beer is fermented in stainless steel and racked into French Oak barrel.
December 2019 - Inoculated with strains of Lactobacillus, with apricot and raspberry added, the beer is left to rest for three years, only disturbed every six months for tasting.
December 2022 - The beer is transferred from the barrels to the brite tank for conditioning and the addition of fresh Kolsch yeast and Orange Blossom honey.
February 2023 - The finished beer is bottled.
